Protein-Packed Cobb Salad

This Cobb salad is the perfect combo of protein, healthy fats, and fresh veggies. Quick to prepare and fully customizable, it's everything you need for a nutritious lunch or dinner option!


Ingredients:

  • 4oz grilled chicken, chopped

  • 3 cups mixed greens 

  • 1 hard-boiled egg, sliced

  • 1 bell pepper, diced

  • 1/3 cup cherry tomatoes, halved

  • 1/4 red onion, chopped 

  • 1/4 cup bacon bits

  • 1/2 avocado, diced

  • 1 serving dressing of choice (we love @primalkitchen honey mustard!)

Instructions:

  1. Prepare the ingredients:

    • Hard boil the egg, then peel and slice it.

    • Dice the chicken, bell pepper, onion and avocado.

    • Halve the cherry tomatoes.

  2. Assemble the salad:

    • In a large bowl, toss the mixed greens.

    • Arrange the sliced chicken, hard-boiled egg, bell pepper, onion, cherry tomatoes, bacon bits, and avocado over the top in sections or mixed in.

  3. Dress the salad:

    • Drizzle with dressing.

    • Toss gently to coat everything.
