Protein-Packed Cobb Salad
This Cobb salad is the perfect combo of protein, healthy fats, and fresh veggies. Quick to prepare and fully customizable, it's everything you need for a nutritious lunch or dinner option!
Ingredients:
4oz grilled chicken, chopped
3 cups mixed greens
1 hard-boiled egg, sliced
1 bell pepper, diced
1/3 cup cherry tomatoes, halved
1/4 red onion, chopped
1/4 cup bacon bits
1/2 avocado, diced
1 serving dressing of choice (we love @primalkitchen honey mustard!)
Instructions:
Prepare the ingredients:
Hard boil the egg, then peel and slice it.
Dice the chicken, bell pepper, onion and avocado.
Halve the cherry tomatoes.
Assemble the salad:
In a large bowl, toss the mixed greens.
Arrange the sliced chicken, hard-boiled egg, bell pepper, onion, cherry tomatoes, bacon bits, and avocado over the top in sections or mixed in.
Dress the salad:
Drizzle with dressing.
Toss gently to coat everything.
